Easy Bakes Series: Banana Bread

I always have a couple of leftover bananas which I hate to waste and love to bake with, so I thought I’d make a classic banana bread and share the recipe!

Easy, simple, but tastes so good.

Ingredients:

  • Overripe Bananas x 3 (snack size)
  • 60ml Unsweetened Almond Milk
  • 2 Medium Eggs
  • 1 tsp Bicarbonate of Soda
  • Vanilla Flavouring – I used Myprotein vanilla flavdrops
  • 1/2 tsp Ground Cinnamon
  • 220g Plain Flour
  • 170g Honey
  • 4 tbsp Coconut Oil

Method:

  1. Preheat oven to 160ºC (fan)
  2. Line / grease a loaf tin depending on preference
  3. Add honey, coconut oil and eggs in mixing bowl and beat the ingredients together
  4. Add the mashed banana and almond milk, before whisking together
  5. Add vanilla flavouring, ground cinnamon and bicarbonate of soda before whisking again
  6. Add the flour to the mixing bowl and fold into the mixture
  7. Pour the mixture into the loaf tin
  8. Bake for 60 minutes
  9. Allow to cool fully before slicing into servings

Serves 8 – Per slice: 272kcal, 41.8g carbs, 9.3g fat, 5g protein
